A particular restaurant might need more time if they prepare it individually. It is cake and ice cream (the "Alaska" part), covered with beaten, sweatened eggs whites (meringe) which is then toasted under a broiler or torch flame -the "baked" part.
Ideally, you freeze the cake and ice cream and the pan / bowl that contains them. That way they stay frozen for the brief time in the broiler oven. So at home, you'd start well in advance.
But most restaurant do considerable prep work on all their menu items. So they can be prepared more quickly and so there are efficiencies in preparation – dealing in the cake and ice cream once to make 30 desserts in advance, instead of handling the ingredients 30 separate times.
So yes, you may have been in a restaurant that required a lead-time for Baked Alaska. But it wouldn't be the norm.
A chocolate souffle would be a better choice for a delay if not ordered in advance. You can't prep a quality souffle in advance and the steps to mix melted chocolate with whipped eggs take a while due to melting and cooling times. I've experienced such a pre-order requirement in an SF restaurant that offered nothing but souffles (both entrees' and desserts). Ordered late and there would be a lengthy delay – 30-45-60 minutes potentially.
